When we asked Danielle Konya, founder of Vegan Treats, what inspired her to start a vegan bakery, her answer was heartfelt and powerful.

“Honestly? I never planned to open a bakery. I just wanted to save animals. Using dessert as a form of activism was something I never expected—but it worked. In the late ’90s, vegan desserts weren’t a thing. Most people thought you couldn’t bake without eggs or butter, so I set out to prove them wrong.

My first cake was a total mess—but I didn’t give up. I kept going. One cake became ten, and ten turned into a full business. Now, more than 20 years later, we’re still here, making bold, unforgettable plant-based desserts.”

Today, Vegan Treats is known as one of the top 10 bakeries in the world, honored by American Express for its creativity and quality. But the journey wasn’t easy.

Founder Danielle Konya shared her experience:

“In the beginning? Everything was hard. There were no recipes to follow, no plant-based butters that browned, no reliable egg substitutes. I was learning as I went—baking overnight, writing down notes, adjusting measurements until my vegan brownies finally turned out right.

We still make those brownies today, now filled with ganache and packed into soft-serve dessert pints. But the challenge now is to stay creative and keep pushing boundaries. We never play it safe. We’ve made cakes with cockroaches, chocolates inspired by toxic plants, and even limited-edition chocolate boxes paired with real oil paintings.

What matters most is staying true to our mission—making unforgettable plant-based desserts that surprise people and celebrate innovation.”

“It takes a lot of testing—and a lot of stubbornness,” Danielle said. “I use both exact baking formulas and instinct. Every detail matters, but there’s a point when the dessert just tastes like it was always meant to be vegan—and that’s the moment I’m always chasing.

Today, I work with an amazing team of skilled vegan bakers who bring those recipes to life. I now spend most of my time running the business and taste testing, making sure everything we create still matches the original vision of what Vegan Treats stands for.”

“We’re obsessed with ingredients,” she explained. “We love using Miyoko’s cultured butter—it gives us that rich, nutty flavor that’s hard to get without dairy. For creaminess, we turn to oat milk and cashew milk. I’m always experimenting—adjusting fat levels, comparing plant-based milks, and testing different natural sweeteners to see what works best.

It’s very detailed work, but that’s how you take a simple idea and turn it into something memorable—like our concord grape soft serve or miso brown butter chocolate chunk cookies.”

“The vegan movement has changed so much—it’s gone from carob chips to Michelin stars,” Danielle shared. “Now, more people are choosing plant-based foods for the animals, the planet, and their health. And that’s a major win.

As for Vegan Treats, we’re planning our next big step: larger-scale production. We want to meet growing demand without losing what makes our desserts special. My dream is for our bold, artistic creations to appear in more places—but still feel magical, meaningful, and totally unforgettable.”

“Inspiration comes from everywhere,” Danielle explained. “It could be a Taylor Swift lyric, a strange insect I saw on a trail, a piece of vintage wallpaper, or even an old antique trinket. I don’t look at other bakeries—I focus on ideas that haven’t been done before.

We’ve created cakes inspired by Victorian Lover’s Eye jewelry, made sugar-sculpted earthworms for Valentine’s Day, and designed limited-edition chocolate boxes that people now collect.

It usually begins with a quick sketch in my notebook—sometimes late at night. Then my creative team and I bring it to life together. The whole team gets excited, and that’s when the real magic happens. Our goal isn’t just to make beautiful vegan desserts—we want to create emotion, tell a story, and stop people in their tracks. If it’s not a little haunting or unforgettable, then it’s not a true Vegan Treat.”
